Chef Philip Cooking with DDE ASIA's Chairman Chef Robert Fontana in HK at the Pacific Harbour Club

Two weeks ago Chef Philip was invited to cook at the wonderful Pacific club in colaboartion with the ever supportivive 

Chef Robert fontana.The menu was a UK inspired nose to tail menu which ran for 3 days & was well received a big thank you to Chef Fontana & Stefan Bucher

Cold Smoked - tempura fried - baked sage derby with guinness & bacon 


Cream of asparagus - caviar - cornish crab 


Chilled slow cooked scottish salmon with tarragon & london gin , 

crispy scotch Quails egg - spring leaves - walnut dressing  - beetroot cream - 

crunchy capers 

Main course 

Herb crusted wagyu beef rump 

parsnip mash - red lester cauliflower cheese - roasted organic root vegetables  

stuffed savoy cabbage with wild mushrooms - port jus 


Rose petal , cassis & black pepper

Orange marmalade bread and butter pudding with earl grey tea infused sultanas
