Disciples Escoffier China delegation, was invited by Chef Alexis Tonard to visit the lab kitchen of Potel et Chabot, a 250 years old high end catering company in the heart of Paris. We were welcomed by Chef Jean Pierre Biffi who then introduced us to his assistant, Chef Emmanuelle. We were explain how they operate from the ground floor where they receive and check the quality of food, to how they ship the food to be transformed and prepared into the different kitchen on multiple level. The amazing procedures achieved for such a massive kitchen are very impressive.
Chef Emmanuelle took an hour of her precious time to guide through the kitchen maze where we were offered a sumptuous cocktail reception in the middle of the kitchen with Champagne and canapes. This made such an impression that some China members are still talking it. We do not have enough words to express our gratitude bestowed upon our delegation for the warm welcome. Truly an experience to be remembered.
