After numerous professional experiences in starred restaurants, particularly in London and Dublin, Dominique Poirier moved to New Caledonia at the end of the 90's. He held various positions as a pastry chef and head chef before becoming co-manager of a gastronomic restaurant in Noumea.
Eager to pass on his knowledge, he decided to turn to teaching and passed the competitive examination to become a high school teacher. Since 2011, he has been teaching cooking and pastry at the Professional High School Auguste Escoffier in Noumea.
