After a few steps, at the corner of a narrow street, the modernity of this country explodes beneath your eyes, buildings, lights, towers worth New York offers to you... Incredible!!!... A few metres away, you come back to the very heart of tradition, mysteries of Asia and typically Asian life scenes. In front of their house, people from Shanghai cook stuffed buns, steamed bread, meat brochettes or even raviolis. This is what makes the strength of Asia: its capacity to mix tradition and modernity, its capacity to adapt. Asia is a fantastic blend of curiosity, modernity and deep traditions. Can we really find a better place to continue towards our goal? Or can we transmit our knowledge of cooking and develop it? If Auguste Escoffier was still alive, he would be marvelled by all the cooking potentials, all these young cooks who ask not more than to learn more. He would be pleased to see the passion which his methods inspire. And this is why we have been trying our best during 4 years to help and develop cooking in Asia. The task is huge and difficult; an association faces many difficulties at the financial level as well as its organisation. But how, in front of the motivation of the young ones whom we meet, how, in front of the success of events which we organise and to which we participate, how not to continue this task which is ours: transmitting and developing cooking in Asia? So, each day with our partners, with friends or professionals, we work restlessly to cook according to the principles of Auguste Escoffier.
